Ok - our guests always have the best ideas on how to be creative with their dinners. Here are a few tips I've heard recently and I thought I'd share!
For Burritos & Enchilladas: Instead of wrapping them in the store, layer the ingrediants in the pan, similar to a lasagna. Then there is no fight over the 'extra' burrito if you have only 2 people for a 3 serving meal.
Also, if you always find you have leftovers and prefer this dish when it is fresh, while the 'lasagna' is still frozen - pull it out of the aluminum pan & cut it in half. Then put half back in a bag or the pan into the freezer & put the other half in your own casserole dish to heat according to the instructions! Now you have 2 fresh dinners with no leftovers. Perfect!
