I enjoy making these bars because they call for so few ingredients and they taste delicious! You can even change the flavor with your choice of jam. They are always a hit.
1 1/2 c oats (quick-cooking or old fashioned)
1 1/2 c flour
1/2 c white sugar
1/2 c brown sugar, packed down
1/4 tsp salt
1 c butter (cold)
3/4 c seedless raspberry jam - (I find the berry ones stand up best to the oats and chocolate though I did use apricot one time and it was lovely)
1 1/2 c chocolate chips (I use less or more according to how much chocolate I want)
1/4 c chopped walnuts (optional)
In a large bowl, combine flour, oats, sugars and salt. Cut in butter until mixture resembles course crumbs. Set aside 1 cup for topping, press remaining crumb mixture into a greased 9-inch square baking pan. Spread with jam; sprinkle with chocolate chunks.
Combine the walnuts (if using) and reserved crumb mixture; sprinkle over the top. Bake at 375 degrees for 30-35 minutes or until lightly browned and bubbly. Cool on a wire rack. Cut into squares.
Tip: To get the bars out of the pan easily, I will cover the bottom with parchment paper.
