Buffalo Chicken Dip

Happy New Year!  Now is the time to hang with family and friends - while you snack.

This dip is a staple at our family events, so good and yet so easy.  Leftovers are good too, just heat them back up in the microwave and stir.

Buffalo Chicken Dip

1 8 oz package cream cheese
1 c Ranch Dressing
1 small can of chicken (or 1/2 c chopped chicken or turkey)
1/2 c (or to taste) Frank's Red Hot (Regular or Buffalo)
1/2 c shredded cheddar

Mix all the ingredients except the cheddar in a small sauce pan.  Melt while stirring and break up the chicken pieces.  Pour into a serving dish that can be baked, I usually use an 8x8 pyrex dish.  Cover with the shredded cheddar.  Bake at 350 degrees for 20-25 minutes or until the cheese is melted and the dip is bubbling.

This dip is easy to double, no problems.  Just use a larger dish to bake it in.

NOTE: If you like blue cheese better, a friend of mine substitutes the Ranch for Blue Cheese dressing.  She also sautees some onions and celery chopped fine and adds extra blue cheese to the whole thing.  It is good, but I like mine better. Ha!

Serve with tortilla chips, fritos or crackers.  Get some before it disappears!

This dip is also perfect for Super Bowl parties.

What is your favorite dip to make?
